The One Carb Protein Waffle

One of my favourite desserts at the moment are waffles (or pancakes) and if I can make them 'protein packed' even better. There are a million and one waffle/pancake recipes out there but they usually take up around 20g of carbs - depending on what ingredients you use. If you're on lower carbs, this an take up quite a hefty chunk of your daily carbohydrates when combined with your toppings, which is why I've been opting for a 1 carb option (depending on the protein powder you use),

1 large egg
1 scoop (25g) protein powder (1g carbs per 25g - I use MyProtein Impact Whey)
1/2 tsp baking powder

1, It couldn't be more simple. Whisk together your egg, protein and baking powder and add in the water bit by bit, until you have a runny waffle/pancake textured mix.
2. Spray your waffle maker (or pan if you're making pancakes) with cooking spray/oil.
3. I usually make 1-2 waffles or 2-3 pancakes with this amount of mixture. Cook for a couple of minutes on each side until golden brown.
4. Top with your favourite toppings. If you're looking for a low carb option, a sugar free syrup is always a good one to go for. I love using Sweet Freedom Choc Shot which only uses minimal macros/calories but is a lot richer than most of your calorie-free syrups.
