100Kcal Chocolate Chip Protein Cookies

One thing that I know a lot of people struggle with is eating/drinking enough protein. I personally prefer to bake with my protein powders rather than drink them and this is one of my favourite recipes.
I originally saw a post by The Macro Queen which I've gradually adapted overtime to get the best macros & consistency. 

Macros per cookie -  Calories: 121 | Protein: 10g | Carbs: 15g | Fat: 4g

Ingredients
60g whey protein (I use MyProtein cookies & cream)
10g cocoa powder
1tsp baking powder
40g vitafibre (available here
40ml water
25g chocolate chips

Method
1. Preheat your oven to around 180 degrees.
2. Mix all of the dry ingredients together apart from your vitafibre and chocolate chips.
3. Measure out 40ml of water and mix it with the vitafibre powder over a low heat, until the mixture becomes clear (as soon as it starts to bubble). 
4. Mix the vitafibre syrup with the dry ingredients. You will find it to be very sticky so add a few drops of water if necessary but don't let the mixture become runny.
5. Divide into 4 cookie-size pieces (or 5 if you want smaller cookies) and place on a baking tray. I find it easier to make them flat as they do rise quite a bit. If you do find them too sticky to handle, try using plastic gloves to mould your cookie shape.
6. Distribute the chocolate chips evenly between the four cookies.
7. Place in the oven for around 12-15 minutes. 
8. Allow to cool & enjoy!
